Some things to keep in mind -

Adult only resorts (some start at age 16 and older) -  will offer more options of double beds than a Couples only resort but typically not alot and they are never guaranteed.

Couples only resorts tend to only offer King size beds. 

Adult/ Couples only resorts typically are 4 and 5 star properties.

Most Adults/ Couples only resorts will not allow children onsite for the wedding-at all.Tthere are a few that will, ( such as Royal Playa del Carman and Sandals resorts) however they require a private reception or for the children to leave immedaitely after the ceremony.

There are huge mega resorts that offer both - family buildings and also adult only sections. The family sections tend to be from 3-5 star quality ( depending on the resort) while the adult sections tend to be 5 star. Some may allow the guests to come over for the wedding for free, others require a day pass ( at a reduced cost)  for the guests to come onsite for the wedding).
